Eating Super Green

Kale, Carrot and Avocado Salad



Ingredients:

1 bunch kale, stemmed and finely chopped

2 cups grated carrot

1/2 avocado, peeled, pitted and chopped

1/4 cup thinly sliced red onion

2 tablespoons lemon or lime juice

2 tablespoons sesame seeds, toasted

1/2 teaspoon reduced sodium soy sauce


Toss all ingredients together in a large bowl. Set aside at room temperature for 30 minutes before serving to allow kale to soften.


I first saw this recipe on a friend's blog (3 Peanuts) along with 2 other recipes (Thai Chicken with Basil Stir Fry and Easy Beef and Broccoli Stir Fry) that I will be trying shortly. I made the kale salad for lunch and it was fabulous. The only thing I would do differently is add an entire avocado instead of a half and I would add a dash more soy sauce. I'm not a fan of soy sauce, but it really is needed to season the kale and cut a little of the bitterness. I would also have a tin of mints handy after eating this. Man alive, does it ever leave onion breath. Additionally, check your smile after eating this. There's nothing more off putting than greenery stuck in the teeth.

FYI: To toast sesame seeds, just place them in a nonstick pan over medium heat until they start to turn slightly brown. Watch them closely, they will burn easily. Do not add oil or cooking spray to the pan.


This is an attempt at eating better and ridding my body of all the toxic junk I've taken in over the holidays. Unfortunately, I haven't done as well at eliminating the Diet Coke. I'm having a bigger issue with that one. If there is ever any doubt that pop is habit forming then try skipping it for a day or two. The result is not pleasant. I caved and split a Diet Coke with my son. I had to get rid of the headache. I'm working on it.

I really need to give kale a try. I'm not sure why I haven't. Thanks for the recipe. I'm going to search for kale in the produce section next time I'm at the store.

I've had Kale only once and I think I would love it in this recipe! Sounds super good. I, too am trying to rid my body of all the junk I ate from Halloween til New Years (for the past 40 years!)

Hmmm...I've never had kale. I'll have to try some. On that note, I tried avocado last month for the first time and liked it ;) I need to venture out more.

Oh, Susan! I know how hard it is to detox from soda, but you were almost over the hump! Trust me, I know how gnarly those headaches can be...mine lasted FOUR long days! Still, congratulations on small victories...you still managed to avoid it for a couple of days! :)

This recipe looks phenomenal...I was on a kale kick for a while and then stopped buying it because of something I saw when I was washing it out. :( I was traumatized and still cannot bring myself to buy/handle it again. Ugh.

I've never tried kale before...but this recipe sounds really really good...I might need to try it!
I had to go cold turkey with the soda...cause allowing myself one or two a day didn't work for me. Just hit 13 months with no soda! You can do it. I learned that diet soda makes me hungrier.
